- 200g paneer, cubed
- 1 cup green peas (fresh or frozen)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste (अदरक-लहसुन का पेस्ट)
- 1/2 tsp turmeric powder (Haldi Powder)
- 1 tsp coriander powder (Dhania Powder)
- 1/2 tsp cumin powder (Jeera choorn)
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Cream or yoghurt (optional, for garnish)
Instructions:
- Heat oil in a pan. Add cumin seeds and let them crackle.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute.

- 2 tbsp oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder (Haldi Powder)
- 1 tsp coriander powder (Dhaniya Powder)
- 1/2 tsp cumin powder
- 1/2 tsp kashmiri chilli powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves (Dhaniya), chopped (for garnish)
Instructions:
- Heat oil in a pan. Add Jeera (cumin seeds) and let them crackle.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute.
- Add chopped tomatoes, turmeric powder (Haldi Powder) , coriander powder (Dhaniya Powder), cumin powder (Jeera churna), red kashmiri chilli powder, and salt. Cook until tomatoes turn mushy.
- Add cubed potatoes and green peas. Mix well.
- Add a little water, cover, and cook until potatoes are tender and the gravy thickens.
- Garnish with fresh coriander leaves.
- Serve hot with rice or roti.
3. Dal Tadka
Ingredients:
- 1 cup yellow lentils (Toor dal), washed and soaked for 30 minutes
- 3 cups water
- 1/2 tsp turmeric powder
- Salt to taste
- 1 tbsp ghee or oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2-3 garlic cloves, minced
- 1 green chilli, chopped (optional)
- 1/2 tsp kashmiri chilli powder (adjust to taste)
- 1/2 tsp garam masala
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- Pressure cook or boil lentils (Toor dal) with water, turmeric powder, and salt until soft and mushy.
- Heat ghee or oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add minced garlic and green chilli (if using). Sauté for a minute.
- Add chopped tomatoes, and kashmiri red chilli powder, and cook until tomatoes are soft and oil separates.
- Add cooked daal and adjust consistency with water as needed. Bring to a boil.
- Add garam masala and simmer for 5-7 minutes.
- Garnish with fresh coriander leaves.
- Serve hot with rice or roti.

Ingredients:
- 1 cup basmati rice, washed and soaked for 30 minutes
- 2 cups water
- 1 tbsp ghee or oil

Instructions:
- Heat ghee or oil in a pan. Add cumin seeds and let them splutter.
- Drain the soaked rice and add it to the pan. Sauté for 2-3 minutes until rice is lightly toasted.
- Add water and salt. Bring to a boil.
- Reduce heat to low, cover, and cook until rice is tender and water is absorbed (about 15-20 minutes).
- Fluff the rice with a fork.
